4. Just before pouring the batter into the pan, add the Eno fruit salt and mix gently.

5. Grease a 9×5 inch baking pan with oil.

6. Pour the batter into the pan and smooth the top.

7. Place the pan in a steamer and steam for 15-20 minutes, or until the dhokla is cooked through.

8. Let the dhokla cool slightly before slicing and serving.

 

To make the tadka (topping), heat some oil in a pan over medium heat. Add mustard seeds and let them splutter. Add green chilies and curry leaves, and cook for a few seconds. Add water, sugar, and salt, and bring to a boil. Reduce heat and simmer for 2-3 minutes.

 

Pour the tadka over the dhokla and serve hot.
